Full Day of Eating and Some Thoughts

I haven't come up with any new recipes lately, but I've come up with some meal ideas and I thought it might be helpful to show what a full day of eating keto (low carb high fat) looks like. A lot of people, when they hear that I eat low carb, ask me "What do you eat then?" I explained this in general terms in a previous post, but now I'm sharing some visuals and meal descriptions for you all. I could never go on a diet and eat plain grilled chicken breast, or egg whites and spinach. I add fat to everything, eat the whole egg, and my veggie of choice is actually broccoli, although spinach is good too.

The keto lifestyle can be full of delicious meals, although it does take a little creativity at first. Hopefully I can give you some ideas with this post.

Breakfast: cheesy scrambled eggs topped with a pesto-ricotta cheese mixture (no, I'm not one of those dairy-free keto people), bacon, broccoli with butter, and coffee with a splash of heavy whipping cream. This was so filling and delicious, very high in fat, low in carbs, and contained a good amount of protein.



While I'm talking about my breakfast, I want to share one of my favorite parts of my morning routine. I like to read my devotional and spend time in prayer while I sip my coffee after I eat. One of today's readings was from 2 Samuel 22 and verse 29 really stood out to me. It says "You are my lamp, O Lord! / My God brightens the darkness about me." It was an excellent reminder that even when life is hard or I am feeling down, God is the one who brings light to my life, comforting and guiding me. 




Lunch: A simple salad of mixed greens from my dad's garden, cucumbers, broccoli (lightly steamed and cooled), ham, colby jack cheese, olive oil, apple cider vinegar, salt, and pepper, with a few macadamia nuts on the side. Then I had a little 4- ingredient chocolate peanut butter mousse (which is not photogenic at all, sorry :P) for dessert. It's just unsweetened natural peanut butter, heavy whipping cream, unsweetened cocoa powder, and Swerve sweetener.







I am actually going off all sweeteners, including the "natural" ones, starting later this week, because I have read some things about how they might spike insulin and contribute to insulin resistance. Since I want to reverse, or at least manage, my insulin resistance, sweeteners are counterproductive to my goals. Bummer. But I am looking forward to getting more creative with savory recipes and enjoying berries for a sweet treat. This chocolate mousse also tastes good unsweetened. 
I will hopefully keep you all updated on how my sweetener-free journey goes!


Dinner: McDonald's works when you're on the go. I used to work there, so I know their burgers are 100% beef. This is pretty much my usual order and it hit the spot this evening. 

Snack/dessert: 3 diced strawberries with a spoonful of almond butter and a sprinkle of salt because the almond butter is unsalted (the only ingredient is almonds).




I hope this gave you some ideas and showed you that keto doesn't have to be boring or feel like a diet! High fat is where it's at! ;)
